Sherry is the inaugural edition of the Cask Finish Series, released March 2025. It blends straight bourbons aged 6–15 years — Kentucky 9 and 10-year, Indiana 6, 7, 8 and 12-year, Tennessee 7 and 15-year — with a derived mash bill of 80% corn, 16% rye, 4% malted barley, then finishes in Pedro Ximénez sherry casks, the Spanish dessert-wine barrels famous for dried fruit, chocolate and toffee. The PX casks pour dessert character straight into the bourbon: Barrell's official notes describe a nose of freshly opened cigar box, baked golden delicious apple, pecan streusel, fresh-cut tobacco and golden raisin. The palate is full-bodied and "electric on the tongue" — smoked Madagascar vanilla, warm pound cake, buttercream, spiced baked pears, star anise and cracked black pepper — finishing with buttercream frosting, black pepper and baked stone-fruit jam, with water opening honeyed biscuits and fresh-cut cedar. For collectors of cask-strength bourbon and sherry-finished American whiskey alike, this is the series' opening statement.

Nose: cigar box, baked apple, pecan streusel, tobacco, golden raisin (Barrell official). Palate: full-bodied — smoked vanilla, pound cake, buttercream, spiced pears, star anise, black pepper.
