Old stocks show in the glass: dark cherry, toasted oak, and brown sugar from the decade-plus bourbons up front; a rye-driven mid-palate of cinnamon, clove, and black pepper; and a long, warm finish of caramel, leather, and dried fruit. Among bourbons and ryes, Bourye splits the difference — the richness of mature bourbon with the spice of high-rye rye, jackalope on the label and all. Neat with a drop of water, or in an Old Fashioned.
