This is the fourth expression of the Mis Aguacates set — joining the Reposado (6 months), Añejo (20 months) and Extra Añejo (36 months) — and the purest way to taste the line's agave. Its NOM profile records stone/brick oven cooking, roller-mill extraction, deep-well water, stainless-steel fermentation without fibers, and double distillation in a stainless pot with a copper coil. Because it never sees a barrel, the Plata lives or dies on the quality of the agave — and at 70 proof it drinks bright and clean.
