Ocho was founded in 2008 by third-generation tequilero Carlos Camarena — of the family behind Tapatio and El Tesoro — with the late Tomas Estes, and it pioneered the idea that tequila, like wine, has vintages worth naming. The production is resolutely traditional: 7–10-year blue Weber agave, stone/brick-oven cooking, roller-mill extraction, wild-yeast open-air fermentation, and double distillation in copper pot stills. The used-whiskey-barrel rest (never new oak — Ocho won't let the wood drown the agave) layers baking spice, vanilla, and caramel over cooked agave depth.
