Zinacantan Espadilla con Guayaba Mezcal is an uncertified destilado de agave from San Diego la Mesa Tochimiltzingo, Puebla, Mexico — wild Espadilla agave (Agave angustifolia) distilled with fresh guava by maestra mezcalera Fabiola Torres Monfil. Bottled at 49% ABV in a 500mL bottle, it comes from a project that makes roughly 1,000 liters a year in total, making every release genuinely scarce. An Agroforestry Project First, a Mezcal Brand Second

Founded in 2019 by maestra mezcalera Fabiola Torres Monfil — a fourth-generation producer — and co-founder Diana Pinzon, an ecologist, Zinacantan defines itself as an agroforestry project first and a mezcal brand second. Everything is grown from seed, production is strictly seasonal, and agaves are left to flower to feed the bat populations the brand is named for (Zinacantan is a Nahuatl word tied to bats). The Espadilla here is wild-harvested Agave angustifolia — the species behind most espadin mezcal, but sourced from some of the last remaining wild zones rather than cloned monocrops. If you enjoy this style, the ancestral bottlings of Tepanal Ancestral Coyote Mezcal come from the same importer family of traditional producers.

How It Is Made

The agave is roasted in a conical earthen pit with huaje wood, milled by machete, hatchet and mechanical mill, then fermented for 30 days in open-air pine wood vats with ambient wild yeast and well water. It is distilled a single time in a copper pot still and adjusted only with heads and tails — never water — so it lands in the bottle at full still proof. For this expression, guava goes into the distillation, layering ripe tropical fruit over the wild Espadilla base in the classic destilado con style.

Tasting Notes

Ripe guava and tropical fruit lead, over cooked agave, a creamy texture and the gentle, funky smoke that defines Zinacantan's Espadilla. Soft, fruity and clean through the finish, with the concentration you only get from a single distillation taken to proof.

How to Enjoy

Sip it neat from a copita or small glass at room temperature so the guava aromatics can open up. It also makes a remarkable high-proof base for agave cocktails. Bottlings at this scale disappear fast — see our Rare & Top Shelf collection for other limited agave releases, and our Holiday Gift Guide when this bottle is headed to a mezcal lover on your list.

FAQ

Is this a certified mezcal? No. Zinacantan is bottled as an uncertified destilado de agave ("Agave Spirits" on the label), made by traditional mezcal methods in Puebla without CRM certification — the same spirit, without the paperwork.

What does "con Guayaba" mean? The Espadilla distillate is made with guava (guayaba in Spanish), which adds ripe tropical fruit character to the wild agave base.

How big is the bottle? 500mL at 49% ABV (98 proof).
