The Seal-Folk Whiskey of Donegal
Sliabh Liag (pronounced "sleeve league") takes its name from the sea cliffs of south Donegal, and its flagship whiskey takes its story from the Silkie — the seal-folk of Donegal legend who shed their skins to walk on land. Founded in 2014 by James and Moira Doherty, the company is Donegal's distilling revival, and The Legendary Silkie was its opening statement: a smooth, layered Irish whiskey built for balance, with peat kept to a whisper so the malt and grain can sing.
Tasting Notes
Crisp green apple and ripe red fruits on the nose, with honey and a breath of smoke. The palate is silky and rounded — orchard fruit, malt sweetness and gentle oak — and the finish is soft and warming, the merest flicker of peat fading into oaky sweetness.
How to Enjoy
Neat or with a drop of water to lift the fruit. Its balance makes it a fine introductory pour for Irish whiskey newcomers and a smooth base for a highball or an Irish Old Fashioned.
