A Puebla Tradition, Bottled by a Maestro

Puntiagudo works directly with independent maestro mezcaleros, bottling single-producer batches under each maker's name. Nazario Salas — a multiple gold-medal recipient at Mexico's premier spirits competitions — makes mezcal and agave spirits from the endemic agaves of the Mixteca Poblana, a high, dry landscape where hot sunny days and cool nights push the plants to develop deep, complex sugars. This bottling comes from Mapisaga, a variety of the Pulquero agave family known for its immense size — three to four meters at maturity — grown for over twelve years in Tectzoyocan before harvest.

Following Nazario's signature method, the cooked piñas are fermented in open-air oak vats with pure well water and indigenous yeasts, then distilled in a 400-liter copper alembic still. Yields are tiny — his Pulquero batches run to only a few hundred liters, most of which never leaves the region — which makes this one of the hardest bottles in our mezcal and tequila department to keep on the shelf.

Tasting Notes

Herbaceous and mineral-driven, with the green, almost saline character Pulquero agaves are known for, layered over cooked agave sweetness and a clean copper-still brightness. The texture is full for the proof, finishing dry and earthy with a lingering vegetal sweetness.

How to Enjoy

Sip neat from a copita or small glass at room temperature, with a pinch of sal de gusano and an orange slice alongside if you like. Collectors of ancestral and artesanal agave spirits should also compare it with the Tepanal Ancestral Espadín Capón Mezcal from Oaxaca, and it makes a remarkable gift for the mezcal devotee — see our Holiday Gift Guide for more rare-bottle ideas.

FAQ

Is Pulquero the same as pulque? No. Pulque is a fermented agave drink; this is a distilled spirit made from the piñas of Pulquero-family agaves — here, the Mapisaga variety — in the same way as other mezcals.

Why is it called an agave spirit? Puntiagudo bottles uncertified small batches, so the label reads "Agave Spirits" even though it is made by traditional mezcal methods in Puebla.

Who makes it? Maestro Nazario Salas of San Miguel Atlapulco, Puebla, bottled by Puntiagudo and imported by PM Spirits.
