For more than 65 years, Maker's Mark never aged its whisky for a decade or more — not from doubt, but because it had not found its own way of doing it. Cellar Aged is that way: after traditional warehouse ageing, the barrels finish in the distillery's LEED-certified limestone cellar, carved into the limestone shelf at Star Hill Farm in Loretto, where cooler, consistent temperatures slow the tannic extraction that makes most decade-plus bourbon bite. The brief from eighth-generation whisky maker Rob Samuels and Head of Innovation and Blending Dr. Blake Layfield was founder Bill Samuels' original taste vision — bourbon without the bite, richer and more complex with age.
