Mainland Minnesota High Ester Still Strength Rum is Mainland's first unaged release — a still strength white rum distilled at Black Frost Distilling in Minnesota and bottled at 62.5% ABV (125 proof). It is built the old Jamaican way: blackstrap molasses, a two-week open fermentation in wood vats with Schizosaccharomyces pombe yeast and 40% dunder in the ferment, then distilled on a copper column and bottled exactly as it came off the still, water never added.

The Story

Mainland built its name on long-aged single barrels, so an unaged white rum is a statement: the flavor here is made in the fermenter, not the barrel. Black Frost's slow, wild fermentation — yeast acclimated to molasses, dunder recycled from previous runs — pushes esters skyward, the same recipe philosophy behind Jamaica's famous high-ester marques. It is the raw, unaged counterpoint to the barrel-aged bottles in our rum collection, and it expands the white rum shelf in a serious way.

Tasting Notes

Big, funky and fruit-forward: overripe banana, pineapple, olive brine and cane sweetness over a clean spirity heat, finishing long with tropical esters that keep rolling.

How to Enjoy

Made for a daiquiri with backbone — at 125 proof it stands up to lime and sugar without disappearing. It also makes a wild split-base in a Mai Tai beside an aged rum like the Mainland 8 Year Old California Rum.

Frequently Asked Questions

What does "still strength" mean?
The rum is bottled at the strength it came off the still — 62.5% ABV — with no water added to proof it down.

What is dunder?
The acidic residue left in the still after distillation, recycled into the next fermentation to boost ester production and funk.

Is this rum aged?
No — it is bottled unaged, so all of its flavor comes from fermentation and distillation.
