Ten Years in Sauternes, Ten Months on the Ocean
Kaiyo built its name on ocean maturation — casks finished in floating warehouses where the motion of the sea works the spirit into the wood. The Rye takes that idea to an extreme: a full decade in Sauternes barrels first, layering the rye's spice with the sweet wine cask's stone fruit, and then ten months at sea to marry it all.
