JJ Corry The Gael Irish Whiskey is a 46% ABV (92 proof), 750mL blended Irish whiskey from J.J. Corry in Cooraclare, County Clare, Ireland — a blend of malt and grain whiskeys aged 5 to 30 years, matured in American bourbon casks and sherry casks, bottled non-chill-filtered with no artificial coloring. J.J. Corry revives the lost Irish art of whiskey bonding: founder Louise McGuane (Chapel Gate Irish Whiskey Company, est. 2015) sources mature Irish whiskeys, then blends and matures them in the bonder's own rackhouse. The Gael is the flagship — named after the bicycle that the original J.J. Corry, a Victorian-era bonder a few miles away, designed, built and sold in the 1890s. Single malts in the blend include Bushmills-distilled whiskey matured in ex-bourbon and Oloroso sherry casks, married with single grain whiskeys aged in first- and second-fill bourbon casks.

Tasting profile: white peach and ripe red apple with strawberry blossoms and freshly cut grass on the nose; candied orange peel, apricot frangipane tart and peach cobbler on the palate with dry clove, nutmeg and cinnamon spice.
