Glendalough Single Cask Grand Cru Burgundy Cask Finish Irish Whiskey is a 42% ABV (84 proof) single grain Irish whiskey in a 750mL bottle — drawn from a single cask that was first filled with bourbon-matured whiskey, then finished in a Grand Cru Burgundy wine cask from France that previously held full-bodied Pinot Noir. The result is Irish whiskey with a distinctly vinous edge: red fruit and tannin layered over single-grain smoothness. Order online from Del Mesa Liquor, San Diego, CA.

A Burgundy Cask in the Wicklow Mountains

Glendalough — Ireland's first craft distillery, founded by five friends from Wicklow and Dublin — built its name on exactly this kind of experiment: single grain whiskey, matured in first-fill bourbon wood, then given a second life in a Burgundy Grand Cru cask imported from France. The Pinot Noir finish brings vinous character and complexity you won't find in standard ex-bourbon Irish whiskey. Explore more Glendalough and the Irish whiskey collection.

Tasting Notes

Per retailer tasting notes: bright golden straw with a subtle red-wine hue; a nose of vanilla fudge, dark cherries, and leafy leather with a vinous aura of red berries; a fruity palate of citrus peel, summer berries, and cherry compote over toasted oak with peppery wood spice; a moderately long finish of red fruit, oak spice, and gentle Burgundy-cask dryness.

How to Enjoy

Neat or with a splash of water so the Pinot Noir cask influence opens up. Serve it to the wine drinker who thinks whiskey all tastes the same — this one will change their mind.

If you see this, grab it!!

I was able to nab another limited-release from Glendalough: the Single Cask Grand Cru Burgundy Cask (only 366 bottles produced). It is finished in pinot noir casks, specifically Burgundy (or Bourgogne Rouge – top-shelf French pinot noir). It opens with red apples, apricots, vanilla, and a touch of citrus, which evolves into black cherries and blackberries. It has great legs and a light oily mouthfeel, coating every tastebud, and delivering a nice long finish full of berries, charred pineapple, and a little pepper. The flavors continue to evolve, sip after sip. This is a very complex dram that is worthy of study (lots of sips, and closed-eye tasting to get every flavor). It is very smooth and has a subtle oak spiciness – very pleasant. If you see this, grab it!!
