Four Pillars Rare Dry Gin
Four Pillars Rare Dry Gin is the flagship — the distillery's first release, from December 2013, and still its defining bottle. A 41.8% ABV (83.6-proof) gin built on Yarra Valley water and ten botanicals distilled together in the 450L German-made CARL copper pot still "Wilma": juniper, whole fresh Australian oranges, lemon myrtle, coriander seed, green cardamom, cassia, star anise, lavender, angelica root, and Tasmanian pepperberry leaf. Spicy with great citrus — smooth, dry, and unmistakably Australian. In a 750mL bottle — order online at Del Mesa Liquor, San Diego, CA.

Wilma's First Born
When Stuart Gregor, Cameron Mackenzie, and Matt Jones founded Four Pillars in 2013, this was the gin they launched with — distilled in Wilma, the still named after Cam's mother. It became the base for everything after: the Bloody Shiraz Gin is steeped on it, and the Navy Strength Gin re-engineers it. See the whole Four Pillars family.
Tasting Notes
Spicy but with great citrus — fresh orange zest and lemon myrtle on the nose with juniper, cinnamon, and cardamom; a smooth citrus-forward palate with warm Asian spice and pepperberry warmth; a dry finish with liquorice and lemon.
How to Enjoy
A G&T with a wedge of orange is the classic serve; it also makes a superb Martini and a bright Negroni.
