The Savoury Gin
Four Pillars — founded in 2013 by Cameron Mackenzie, Stuart Gregor, and Matt Jones — hadn't added a new core-range gin since 2015 when Olive Leaf landed. A visit to Cobram Estate's olive groves sparked the idea: roughly a litre of fresh olive oil goes into the still per batch, distilled on the German-made CARL copper pot stills.
