Locally grown yuzu from Mountain Yuzu in the Ovens Valley delivers lemon-mandarin-kumquat-grapefruit aromatics, layered with Australian finger lime, fresh ginger, turmeric, sencha genmaicha (Japanese green tea with roasted brown rice), lemon myrtle and a strong pine-needle juniper backbone. The Yuzu Gin That Remembers It's Gin
Four Pillars first touched yuzu in a 2017 collaboration with Melbourne's Kisumé restaurant, then again with Kyoto Distillery in 2019 — Fresh Yuzu is the perfected, permanent version. Tasting Notes
Nose: bright yuzu — lemon, mandarin and grapefruit — with lemongrass and pine. Palate: citrus-forward and fresh, ginger warmth and green-tea texture over bold juniper. Finish: long and delicate, pink-peppercorn spice.
