The name honors John Henry "Doc" Holliday — the Georgia-born, University of Pennsylvania–trained dentist who became the most famous gambler-gunfighter of the Wild West, side by side with Wyatt Earp at the O.K. Corral. The World Whiskey Society, a non-distillery producer known for curating rare sourced whiskeys, built this release around that legend: a Southern gentleman's polish with a gunfighter's backbone, in a bottle made for collectors and serious bourbon drinkers.
A decade in new charred American oak gives this bourbon its depth. The nose runs deep caramel and butterscotch into oak spice, toasted vanilla, and dark fruit. On the palate it is bold and complex — baking spices, dark chocolate, honey, and leather, with real barrel-char depth from those ten years. The finish is long, warm, and lingering, with black pepper, cinnamon, and smoky sweetness. Uncut, unfiltered bourbon does not get much more old-school than this.
