Dingle La Le Bride Single Malt Irish Whiskey is a 101-proof (50.5% ABV), 700mL triple-distilled Irish single malt — matured in first-fill Bourbon casks, then finished in first-fill Rye casks, non-chill filtered and bottled without added colour. It is the second release in Dingle Distillery's Wheel of the Year series, limited to 10,000 bottles, and available to order online at Del Mesa Liquor, San Diego, CA.
Lá le Bríde — Imbolc, St Brigid's Day — is the Celtic festival that marks the beginning of spring, the midpoint between the winter solstice and the spring equinox, when the light starts winning again. Dingle bottled that mood: about five and a half years of Bourbon-cask honey and biscuit, then roughly eighteen months in Rye casks for the spice lift. It is only the distillery's second cask-finished release, and it took Gold (91 points) at the London Spirits Competition 2023.
Tasting profile: honey, crushed raspberries, custard creams, bourbon biscuits, icing sugar and butterscotch caramel on the nose; big bang spice, mixed herbs, chewy caramel, crystallised ginger and chopped mint on the palate; toffee dissolving into spiced fruit on the finish.
