Castle & Key rose from the ruins of Colonel E.H. Taylor Jr.'s 1887 Old Taylor Distillery — a European-style castle with a classical springhouse and sunken garden, shuttered in 1972, bought in 2014 and restored over four years before reopening in 2018. Harvest is its fall gin: starting from the house rye whiskey newmake, the team steeps sumac in the base spirit, then vapor-distills through baskets of cedar leaf, star anise, fennel and bay leaf, dialing back the floral notes of the flagship gin for the first snap of cold — verdant, woodsy and spiced, drawn with water from the site's key-shaped limestone spring. Soft pine, bay leaf and fresh cracked pepper up front, with berry compote, sweet anise and savory herbs; fresh cedar, licorice, tart dark berries, cinnamon, fennel and clove on the palate; a sweet, spicy finish easing into woody, mineral notes.
