Akashi-Tai Shiraume Ginjo Umeshu is a 14% ABV Japanese plum wine (umeshu) made by macerating shiraume plums in premium ginjo sake for six months at the Akashi Sake Brewery in Hyogo, Japan. Unlike homemade umeshu built on distilled spirit, this one uses real ginjo sake as its base — sweet prune and almond with a refreshing dry finish, in a 500mL bottle. Plum Wine Built on Real Sake

Most umeshu starts with neutral distilled spirit — Akashi-Tai starts with its own ginjo sake. Ripe shiraume (white-blossom) plums steep in that sake for six months before the fruit is removed and the liquid aged, giving the finished wine a depth and roundness spirit-based umeshu can't match. It's the Akashi-Tai house signature in dessert-wine form — and a fine entry point to our sake and plum wine collection.

Tasting Notes

The nose shows dried fruit, date, cherry, and plum — confit cherries in some pours. The palate is sweet and generous with rich prune and almond notes, finishing dry and refreshing rather than cloying.

How to Enjoy

Serve well chilled as an after-dinner pour, or over ice with a splash of soda water for a light aperitif. It also works as a cocktail base — try it in a plum wine spritz.
