Jalisco Añejo | 750mL | 42% ABV (84 proof) | Aged 1 Year + 12 Days — Volans Añejo is a 2,700-bottle numbered limited edition from El Pandillo distillery (NOM 1579) in Jesús María, in the southern Los Altos highlands of Jalisco, Mexico. Barrels were first filled with Volans Blanco at 45% ABV on May 3, 2023, and emptied May 15, 2024 — exactly one year and twelve days later. The 10 first-fill barrels blend 70% American oak, 20% German oak and 10% French oak. Crafted from estate-grown mature Blue Weber agave in red-clay highland soils, stone-and-brick-oven cooked, crushed on the custom mechanical tahona "Frankenstein," and double-distilled in custom copper pot stills. The triple-oak maturation shows in the glass: retailer notes (The Barrel Tap) cite cooked agave, caramel, vanilla, light oak spice, citrus and dried fruit on the nose, with roasted agave, honey, caramelized sugar, baking spices and toasted oak on the palate, closing long with sweet agave and gentle wood spice. Felipe Camarena's El Pandillo is one of the highlands' most respected distilleries, and this numbered run is the tequila connoisseur's top-shelf añejo — an estate, single-distillery, exact-aging-dated release.
