'Americano' in this category has nothing to do with America — it comes from amer, bitter, the gentian-and-wormwood backbone of northern Italy's aperitivo tradition. Rinomato, revived in Asti by Giancarlo Mancino (of Mancino Vermouth) and Fasel Shenstone, crushes its botanicals in a vintage 1930s mill and extracts them for 45 days into a base of Trebbiano, Moscato and Malvasia wines; the gentian comes from France's Massif Central for the style's signature dry, tannic grip. Tasting Notes

Nose: Panettone, fresh bergamot and mandarin. Palate: Gripping and root-driven — gentian, cinchona and wormwood bitterness over the white-wine base's acidity, structure and floral notes. Finish: Dry and tannic, with the citrus returning.
