Maraska d.d. of Zadar, Croatia, continues a five-century liqueur and spirits tradition rooted in the 16th-century Dominican monastery recipe and the Zadar maraschino industry founded by Francesco Drioli (1759) and Girolamo Luxardo (1821), with the modern Maraska company formed from the region's historic producers after the Second World War. For its Cherry Wine, Maraska ferments native Marasca cherries — the sour cherry variety that grows only in the Zadar region's rocky Adriatic soil — into a fruit wine, not a grape wine. It is made under strict kosher guidelines, certified Kosher for Passover.
