The Lost Art of Tequila-Making

Cazcanes is known for what it calls "the lost art of tequila-making" — and for highlighting proof levels rather than just aging categories, with a numbered line that lets drinkers choose intensity (#7 at 40%, #9 at 50%, #10 at still strength). No. 7's process is meticulous: lowland agave hand-selected at peak sugar, a 24-hour low-pressure autoclave cook, four-pass roller-mill extraction, fermentation in stainless steel with a proprietary yeast, and double distillation in stainless steel pot stills fitted with copper coils — all built on natural volcanic spring water from Navichi Springs, trucked to the distillery for each run. Explore the Cazcanes collection, browse more blanco tequila, and shop tequila at Del Mesa.

Tasting Notes

Warm cooked agave on the nose with bright citrus — grapefruit, orange zest — plus baking spices, guava, black pepper, and floral/mineral undertones. The palate is clean and sweet: sweet agave, grapefruit, caramel, vanilla, coconut, and white/black pepper with a vegetal-anise edge and lowland minerality. Long, crisp, floral, peppery finish.

How to Enjoy

Neat or in a blanco-forward margarita — its clean agave character and bright citrus make it a cocktail workhorse, and the 40% ABV keeps it sessionable.
