Catocho's rests for a year in stainless steel at Destilería Santa Lucia in Zapopan, Jalisco, letting the clay-oven, tahona-extracted, copper-pot-distilled spirit settle and round without any oak influence — the agave, the clay and the copper have to carry the whole flavour. Master distiller Edgar Gustavo Barroso Hernandez works with agave sourced from Michoacán agriculture, additively free, and every ceramic bottle is hand-painted, so each decanter is one of one.
Tasting profile: a settled, rounded blanco — cooked agave depth from the clay oven and tahona, earthy minerality, a soft sweet middle from the long steel rest, and a clean, dry agave finish with no barrel makeup.
