The Bat God of Oaxacan Rum

Camazotz is named for the Mayan and Zapotec bat god of night and sacrifice — and this is a wild spirit to match. Sugar cane is pressed with a hand- or mule-drawn press, the juice ferments with wild airborne yeasts, and the wine is distilled to proof in small copper alembic pot stills. Nothing is added and nothing is taken away; the rum is bottled unaged, clear in the glass, tasting of fresh sugar cane, grassy vegetal notes, wood tones and a long saline finish with pineapple funk. It's a cousin of agricole and cachaça — try it in a daiquiri, or browse more white and unaged rums in the white rum and rum collections. More from the producer at Camazotz.

Tasting Notes

Clear in the glass. Fresh-cut sugar cane, grassy and vegetal notes, wood tones, a long saline finish — pineapple funk on the back end.

How to Enjoy

The classic serve is a daiquiri, where its funk and salinity shine. Also excellent as an agricole-style cocktail rum or sipped neat for the full Oaxacan experience.
