Pot-Still Bourbon, the Texas Way
Balcones built its name on doing everything itself in Waco, and this bourbon — added to the core range in 2019 — is its everyday statement of that philosophy. The mash leans on Texas grain: roasted blue corn at the centre, with Texas wheat, Texas rye and malted barley around it. It runs through Forsyth copper pot stills rather than a column, which keeps the spirit broad and oily, and then ages under the wide Texas temperature swings that pull whiskey in and out of the oak far faster than Kentucky's climate does — which is why a minimum of 24 months in new charred oak tastes older than the calendar suggests. Tasting Notes
Per the brand's notes: a nose of honey, Honeycrisp apple, kettle corn and graham cracker; a palate of honey, sweet cream and candied pecan; and a soft, sweet finish with a drying, tannic fade and lingering spice. It is a sweet-forward bourbon with the pot-still weight underneath.
How to Enjoy
Neat or with a splash of water, the apple and kettle corn come forward; the 92 proof also makes it a natural bourbon for a Whiskey Sour or a Gold Rush. Compare Texas styles in our bourbon whiskey collection and the wider whiskey collection.
Frequently Asked Questions
Is Balcones Pot Still Bourbon really made by Balcones?
Yes — the back label reads "Distilled and Bottled by Balcones Distilling, Waco, Texas." It is mashed, fermented, pot-distilled and aged at the Waco distillery; it is not sourced whiskey.
What grain is in Balcones Pot Still Bourbon?
Four grains: roasted blue corn, Texas wheat, Texas rye and malted barley. Balcones does not publish the percentages.
How old is Balcones Pot Still Bourbon?
The label states it is aged at least 24 months in new charred oak. Texas heat ages whiskey fast, so it drinks with more oak maturity than that minimum suggests.
