Balcones Cataleja Texas Single Malt Whiskey is a 118 proof (59% ABV) limited-edition American single malt from Balcones Distilling of Waco, Texas, released November 2023 for the distillery's 15th anniversary (MSRP $125). Made from 100% Golden Promise malted barley, it began maturation in ex-Kentucky-bourbon barrels — then, after three years of the Texas climate's concentrating effects, moved into decommissioned 80+ year-old sherry solera puncheons (Moscatel, Amontillado Dulce, Oloroso, and Palo Cortado) hand-selected from Spanish bodegas. It's available to order online at Del Mesa Liquor, San Diego, CA.

  • ABV: 59% (118 proof)

  • Name: "Cataleja" — a loose translation of the English "spyglass"

A Spyglass Into Texas Single Malt

Head Distiller Jared Himstedt calls Cataleja "one of the most complex and unique whiskies we've made" — and the process reads like an experiment in controlled chaos. Because the first fill in the 80+ year-old solera casks hit hard, the whisky was pulled back into neutral barrels, then put through two additional rounds of refill single malts through the decommissioned casks, each pass extracting a little more sherry character. Total Wine calls the wood "80 to 100-year-old Sherry Solera barrels" — casks older than the distillery by six decades. Browse more Texas whiskey in American whiskey and the full range from Balcones.

Tasting Notes

Balcones' own sell-sheet notes (via retailers): on the nose, "bright yet earthy with notes of brandied figs dusted with smoked paprika that build to sautéed apricots served on an olive wood spoon," with deeper breaths of sobrasada, orange zest, mossy cherry cavendish, and venison jerky in browned butter. The palate is "sticky with brooding notes of medjool dates stuffed with cashew butter, cacao nib, and ground clove" — a full-throttle 118-proof pour.

How to Enjoy

At 118 proof, add water slowly — it opens dramatically with dilution. Neat in a Glencairn is the purist's route; a single large cube tames it for longer sipping sessions.

Frequently Asked Questions

Is Cataleja a bourbon?
No — despite the old listing tag, it's a Texas single malt: 100% malted barley, no corn in the mash bill. (The listing type is being corrected to American Whiskey.)

How old is it?
No age statement is given — it's the distillery's 15th-anniversary release, not a 15-year-old whisky.

What makes it a "Texas" single malt?
Distilled and matured in Waco, Texas, where the climate's heat concentrates the whisky aggressively in barrel — three years there does the work of much longer elsewhere.

What are solera puncheons?
Large 80+ year-old sherry casks from Spanish bodegas (Moscatel, Amontillado Dulce, Oloroso, Palo Cortado) that previously held solera-system sherry — the wood here is older than the distillery itself.
