Fine Champagne, Carefully Raised
"Fine Champagne" is cognac's most prestigious designation — a blend drawn exclusively from the region's two finest crus, Grande Champagne and Petite Champagne. Baardseth's VSOP comes from the Distillerie de Chevanceaux, where the two crus are distilled in copper alembic stills and aged separately before blending. Four to six years in lightly toasted small-grain French oak — a quarter of it new — gives the "Vieille Réserve" its depth. Tasting Notes
Medium amber with dark copper and golden glints. Crystallized fruits first — dry apricot, orange peel, prunes — then still-fresh mature grape with light toasted oak. Generous palate: dry and crystallized fruit, vanilla and pastry, a light persistent smoky note, minerality and light rancio; very long finish.
How to Enjoy
Neat or with a single ice cube after dinner; the vanilla and spice also make it a fine VSOP for an Old Fashioned-style cognac cocktail.
