Avua is produced at Fazenda da Quinta in Carmo, Rio de Janeiro — a family distillery founded in 1923 — for the Avuá brand created in 2009. Hand-cut estate sugarcane is ground with a waterwheel, fermented under 24 hours with wild airborne yeasts, and distilled in a copper alembic pot still. Instead of oak, this expression rests in amburana — a native South American hardwood — giving a spice profile no oak-aged spirit can copy.
Tasting notes: baking spices (cardamom, anise, allspice) with a light, distinctive woodiness on the nose; nutmeg and hay front and center, herbaceous, with crème brûlée and citrus peel; a warm, earthy finish with more anise and spice.
