Winery Notes
Vinification: In general, for our Cuvee Chardonnay, we look for elegance, balance and ageing potential. We play with whole bunch pressing versus maceration depending on the vintage. In 2008, we did 40% of whole cluster pressing and 60% of maceration into the press before fermenting. After only 54% fermented in French barrels (part news and part used) and 46% in stainless steel tanks. No malolactic fermentation was pursued. The result is a well integrated oak, a balanced palate with an elegant structure that enhances the natural fruit and freshness of the grapes.
Harvest: 2008 was characterized by a cold and dry winter. Because of these conditions bud break occurred one week to ten days later. The spring-summer was drier and temperatures were extreme in both directions, so the vines were able to compensate for the initial delay. Flowering conditions were good and we had grape set on the usual date. During the maturation period, the temperature was the same as average, but we experienced extreme highs and lows: The weather conditions during the harvest were very good even with a little rain (12,3 mm) on March 7th and another shower of 15 mm on April 11th, that where welcomed after such a dry spring-summer.The Chardonnay was carefully hand harvested from the end of March through April 2008 in early hours of the morning into small 15 kilos plastic cases and transported in refrigerated trucks to our winery in Colchagua.
