Founded in 2019 by Fabiola Torres Monfil and ecologist Diana Pinzon, Zinacantan defines itself as an agroforestry project first and a mezcal brand second: everything is grown from seed, production is strictly seasonal, and total output across all expressions is only about 1,000 liters a year.
