Seventy heads weighing 1,253 kg were harvested on September 22, 2021 to produce only 103 liters. The hearts were roasted five days in a conical earthen oven fired with oak, crushed by hand with machete and wooden mallets, and fermented eight days in 1,000-liter oak vats with natural yeast and stream water, supported by tepehuaje bark — a local solution that keeps the cold-climate fermentation working on this notoriously difficult agave. On October 27, 2021 the spirit was distilled twice in an 80-liter handmade clay pot, then rested five years in glass before bottling on September 25, 2026.
