The agaves, 12 to 15 years old at harvest on April 12, 2023, were left \"tumbados\" in the field for two to three weeks to concentrate their sugars, then roasted six days in a conical earthen oven with guamuchil and oak, crushed by machete and tahona, fermented naturally for seven days in 1,000-liter sabino vats with well water, and double-distilled on June 28, 2023 in a 300-liter copper pot still with refrescadera. The spirit then rested three years in glass before bottling on September 25, 2026.
