Harvested after approximately 12 years of maturation in San Agustin Amatengo, this wild-looking agave develops its complexity through slow growth in mineral-rich soils, warm sunny days, cool mountain nights and seasonal rains — conditions that concentrate the plant's sugars and aromatic compounds. Luis Juarez roasts the agave in a conical earthen oven with guamuchil and mesquite, mills it by tahona, ferments naturally with spring water, and distills in a traditional refrescadera copper still, preserving the terroir of Amatengo in every bottle.
