Providence, built by Velier in Port-au-Prince and fired in 2019, works Cristalline cane juice and syrup on a copper bain-marie pot still, fermented with dunder from earlier runs. Four tropical years in casks that once held the legendary closed Caroni distillery’s rum rounded the raw cane and high-ester punch of the white Providence with wood, tar and dark fruit.
