Sola de Vega, at 4,500 feet in the Sierra Madre del Sur, holds some of the richest agave diversity in Mexico and is renowned for mezcal olla de barro, distilled in small clay pots. Sosima roasts the Coyote in a conical earthen pit over oak, grinds it with wooden mallets, ferments it in open-air cypress wood vats with ambient yeast and well water, and double distills it in clay pots. This batch ran to just 80 liters. It is available to order online at Del Mesa Liquor.

Style: Destilado de agave (uncertified mezcal), ancestral clay-pot method

ABV: 48.5% ABV (97 proof)

Size: 750mL

Producer: Sosima Olivera Aguilar, Maestros Mezcaleros Tres Colibrí cooperative

Region: San Francisco Sola de Vega, Oaxaca, Mexico

Agave: Coyote (Agave americana var. oaxacensis), 100%

Method: Earthen pit roast, wooden-mallet grind, open-air cypress-vat fermentation, double clay-pot distillation

Eighty Liters From the Heart of Sola de Vega

Fanekantsini is produced by the Maestros Mezcaleros Tres Colibrí cooperative, an association of eight producers in the highland Chontal and Sola de Vega regions of Oaxaca founded in 2012 by Sosima Olivera Aguilar. Originally from San Miguel Suchiltepec in the Chontal region, Sosima comes from a line of mezcaleros and recalls making mezcal with her father and grandmother as a small child. The co-op shares costs, work and risk among its producers while committing to ethically produced, small-batch mezcal from native agave. An 80-liter batch of a wild americana subvariety is about as small as commercial mezcal gets — compare it with her Fanekantsini Chato and Pelón Verde, or browse the wider mezcal collection.

Tasting Notes

The soft mouthfeel clay-pot mezcals are known for, with the bright, lactic acidity common to Sola de Vega: creamy texture up front, then lifted fruit, herbs and a fine mineral thread, finishing clean with gentle earth.
