Every Alambique Serrano rum starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills, fermented with wild yeast, and distilled on the family's custom-built Krassel column and copper pot stills. Nothing is added - no sugar, no coloring, no flavoring - and PM Spirits imports the rums to the United States. The Arbol de Pipe is a deciduous coral tree that flowers late in the dry season in thousands of scarlet blooms - a delicacy in regional dishes and a nectar source for hummingbirds and bats along the road from Santa Maria Tlalixtac to Cuicatlan. The rum named for it is the most mature Vida Nativa single cask: four full years across French and Hungarian oak, the red wine cask lending a vinous, berry-toned frame.
